Why Eat Microgreens?

Microgreens are basically baby vegetables, harvested between stages of spout and maturity, when their flavor and nutritional concentration is at best. Certain kinds of Microgreens have concentrated nutritional content for up to 40 times greater than their mature versions. Theoretically if you eat the same amount of Microgreens instead of your regular vegetable intake, your nutritional intake is up to 40 times greater.

Many people have experienced and reported health benefits in regular consumption of Microgreens. My personal experience of fresh Microgreens, aside from their amazing appearance, flavors and textures, is a direct dose of natural energy, therapeutic wellness and improved digestion.

Many people use Microgreens as garnishes to add a touch of class and ultimate freshness to a dish. However the real benefit I believe, comes from regular intake in quantities. Because of how they are grown and harvested, in eating them you are being far more effective at getting the best quality nutrients for your body. Let’s eat Microgreens and be closer to nature. Below is a dish I recently made with my harvest. Enjoy!
